Have no fear, this isn't about my potential mutant offspring. This is about the lame recipe for Gingersnap-Raspberry Sandwiches in Martha Stewart's Cookies cookbook. They came out too crunchy, too eggy, and the spice was a little off.
The recipe calls for all the usual suspects, but a few substitutions make for a much better cookie. Replace the vegetable shortening with butter, molasses for maple syrup, add dark brown sugar, more flour, a little vanilla, a little salt, and a few extra spices (all spice and a pinch of ground cloves) to give them some SNAP!
And we have a winner! These cookies are big and chewy with a yummy spicy snap.
